My research activities are related to basic techniques for analysis of carbohydrates and polysaccharides with some relevance to food and biological samples and systems. This includes isolation from a variety of plant materials such as cereals, potato and algae and their subsequent analysis using enzymes, different chromatographic methodology and spectroscopy (NMR). I investigate the fate of carbohydrates during food processing and in other biological processes such as digestion and fermentation. My main activities are linked to constituent in the food that have some health relevance, good or bad, such as dietary fibre, sugars and acrylamide. I have been in charge of different national projects related to polysaccharides and cereals as well as taking part in Eu projects and Cost actions such as Cost 48, 927, 928.
