I have studied the regulation of muscle growth in Atlantic salmon and have subsequently investigated how various factors influence fillet quality and the regulation of astaxanthin metabolism. For more than 15 years, I have worked in the field of salmon nutrition, with a primary focus on lipid metabolism.

My research has covered several aspects of omega-3 metabolism in salmon, including the regulation and stimulation of omega-3 fatty acid synthesis, genetic variation in the capacity to synthesize omega-3 fatty acids, and the nutritional requirements of the fish. I have also evaluated and compared different sources of omega-3 fatty acids for use in salmon feeds.

In addition, I have investigated the bioactive effects of marine fatty acids, including monounsaturated fatty acids (MUFA) and very long-chain polyunsaturated fatty acids (VLC-PUFA), with a particular focus on skin health in both salmon and humans. Oxidation and cellular responses to oxidative stress are also key areas of my research.

I have worked on in vitro cultivated meat from both salmon and chicken. My research combines in vitro cell culture models and in vivo fish trials with biochemical and molecular biology approaches. I also have experience with CRISPR-based gene regulation in both cell cultures and Atlantic salmon.
