Mona Elisabeth Pedersen
PhD
Senior Scientist
I am a researcher in the department of raw materials and processes, and have been working here at Nofima since 2006. My research field is extracellular matrix (ECM) biology and I have long research experience in various connective tissue problems such as; Skeletal deformities, muscle growth, tissue regeneration and meat quality. I also work with bioactivity of residual waste and the use of this to new products. The use of eggshell membrane for wound healing product is an example. Collagens, proteoglycans, carbohydrate structures (GAGs) and matrix metalloproteinases (MMPs) are some biological components that I have particular focused on in my research. I use different cell models (in vitro cell culture), histology, enzyme measurements (MMPs) and a variety of different molecular methods in my work.
