I am a researcher in the department of Raw materials and process optimization. My research is focused on utilization of protein-rich rest raw materials as a source of nutrients and bioactive compounds. This includes research on hydrolysis process as well as characterization of protein hydrolysates, usually by HPLC, NMR and MS. I am also exploring the bioactivity of these hydrolysates, by using different in-vitro bioassays coupled with analytical techniques. I have a PhD in organic chemistry from University of Rijeka, Croatia, with experience in organic synthesis and medicinal chemistry. My research interests lie between organic and analytical chemistry, with a big curiosity for the innovations in this field.
