I am a post-doc in the project TastyKelp, where I study the effect of process technology on macroalgae, especially sugar kelp and winged kelp. I am also involved in several other projects relating to utilization of seaweeds as foods. In my PhD from the Technical University of Denmark (2017-19) I investigated the processes occurring during oven heating of cod, and created mathematical models describing these using the software COMSOL Multiphysics.
