Summary
Kale or curly kale (Brassica oleracea var. sabellica) has been found to contain high levels of phytochemicals with antioxidative properties as well as other biological active compounds possibly influencing human health. A ready-to-use product of kale could make it more available for the consumers. The effect of gentle processing of kale including blanching on flavonoid content and antioxidant capacity was studied.
