Summary

Sensory characterisation is one of the most powerful and widely used tools in sensory science, both in industrial and academic settings. For decades, Descriptive analysis with trained assessors has been regarded as the golden standard for describing the sensory characteristics of products. However, the development of several alternative and flexible methods has demonstrated that consumers can provide accurate and reliable information. In this context, the aim of the present chapter is to provide a brief description of some of the most popular methodologies for sensory characterisation with consumers and to provide recommendations for practitioners on how to implement them.
