Summary
Pacific oysters (Crassostrea gigas) is invading the southern coast of Norway and is a threat to local eco systems. If stock development increases, one alternative is commercial harvesting. At least 25 000 tonnes must be harvested annually, meaning that 5000 tonnes of shell meat has to be processed. Nofima has tested freezing, heat treatment, high pressure treatment and cool storage and analyzing quality parameters like drip loss, cook loss, texture, and different sensory properties. Some model products based on oysters have been developed.
